Q: Does this work to pasteurize egg yolks?

That seems to me to be like using an elephant gun to kill a mouse. Unless you are planning on pasteurizing several dozen at once. If you are planning on doing that it should work wonderfully.

Q: Anyone use this with a grain hopper? What size would fit?

It's got a false bottom and a bazooka screen. I can't think of a reason why you would need a grain hopper or basket or bag or anything else really.

Q: Where is the clear rubber o ring supposed to go? also i read in the instructions that we are supposed to have two wrenches, but mine only has one

Yes there are two different type of o rings that come with this kettle. I ended up using one of each I believe, just as the instructions show. You're good no matter how you do it as long as it doesn't leak. My brewsie Kettle only came with one wrench as well, which in my case was all I really needed.

Q: Are there install instructions with this? I dont know what sides the gaskets should be on. I either didnt get them or threw away by accident.

There are red O rings that fit in the slots on the locking nuts on both inside and outside of the ball valve. the rings press against the kettle. A third red O ring goes in the slot on the nut that goes on the inside of the thermometer. there is nothing on the outside of the thermometer. The clear silicone washer goes on the barb and the ball. valve screws against it. Remember to use the Teflon tape provided on the inside threads of both the lower nut to the valve and the inside nut to the thermometer.
