Superb sharp filleting knife
This is an excellent filleting knife . The flexibility allows easy filleting and it is super sharp so be careful if you are used to dull knives. It makes short work of fish and a very neat Jo. The plastic handle is great and is there for a reason in order to make cleaning easy and it doesn’t hold fish oil like wood might. Very high grade stainless steel that stays sharp and doesn’t rust. A Swiss masterpiece!

Does the job exactly in the way advertised - we're very happy with this product. We only use it for fish and nothing else and this helps keep it sharp.

Exactly what I wanted from a boning knife
Like the mythical Excalibur, slices all the meats I've taken it near, while being thin enough in the blade to navigate bones well.Knock off one star because the moulding seam on the handle is rough and pointy. Missing some quality control, or even a quick sand in post process.
