would standard ak7 mags fit in the pouches?

I run an M4 based Ares and they fit nice and snug. I think the AK mags are the same shape but slightly longer. The top straps are only held by Velcro so they allow a fair bit of leeway so would have thought you should be ok

How much molle is around the sides of the plate carrier?

For me approximately 7 loops wide by 3 lots deep either side. It kind of depends on you size as the side panels secure to the back plate, the bigger you are the more loops the thinner you are the less you get.

can the vest fit airsoft insert plates?

Yes, velcro flap on front and back panels allows for plate inserts
