Outstanding Cookbook on Vegetarian Tagine and Couscous!
We recently acquired a Tagine and since my spouse is primarily a vegetarian, bought this book. It's one of the best cookbooks I have ever ordered and used. Many recipes are two pages--meaning one full page for the recipe and the facing page with a quality photo of what that particular dish looks like when prepared. The lion's share of dishes have pictures so outcomes can be anticipated.Attached pics are of my first attempt with using a Tagine and following one of the recipes in this book.I am in heaven and so is she!! Already, I have cooked half a dozen different Tagine recipes--two of them repeated--they were so flavorful--and will soon try a few more. I must admit, I have yet to make anything in the Couscous recipe section. I wanted to master the Tagine first. In some respects, it seems to resemble Indian cooking. It did send us scurrying for Orange Blossom Water and Rose Water. Of course, if one cooks with longer times, the greens can begin to pale. I have already adjusted for that. One of the lentil recipes utilizing little water ended with the lentils moist and flavorful--so different from when I have typically boiled them. What a keeper!A couple days ago, I did the sweet potato one with orange blossom water. WOW!! What a knockout! The next day leftovers were magically appealing and savory with the orange robustly accentuating the sweetness of the potatoes. Every dish tried to date came out very well.

So many delicious recipes
Having lived in Morocco and visited families there several times over the years, I find these recipes satisfy my craving for North African food. Each one is tasty and genuinely easy to make. Some are so delicious that I can't wait to make them again. I love this book. Highly recommended.

Tagines have been excellent
I have made several of the tagines so far and both have turned out very well. I make mine in a medium-sized tagine, but you could also make them in a Dutch oven. There are a lot of interesting combinations in this book.

Excellent cook book I bought for my wife to accompany the tagine I got her. Great recipes for tagines and other sides. Looks great on the counter too.

Great tagine recipes!
Great cookbook for my beloved tagine. I haven't tried the couscous recipes yet, but I've made a number of the tagine recipes. Yummy and simple, with only a bit of prep required.

This is a very pretty cookbook; but I was a little underwhelmed with the main dishes I made. I feel like a lot of them might be good if you new certain tricks or fiddled with the recipes long enough. For example, most of the main dishes I cooked were too watery. You'd be better off starting with less water and adjusting it to if needed. But there's no instruction that even hints at this. Also chickpeas are a bland bean - to have them cook well and not suck all the flavor of the rest of the dish - is really an art and I felt like too many of the dishes here lacked that kind of basic knowledge of vegetarian ingredients. It may be worth the purchase price because of the condiments.
