Go to the shoe store and measure with their appliance. Probably a 6.5 but be sure by measuring.

Wil these high top shoes protect your ankles against spraining?

No. If you wrap your ankle first and then don the shoe, you’ll have additional support for the ankle.

As far as I can tell what they are referring to is the top is elastic and is attached to a foam rubber sole that’s extremely lightweight, flexible, and breathable which will be great for the summer.
