Like ALL the Peruvian olives I've bought here: DRY, GRITTY and BITTER
I was SO wanting to love these olives. I'd bought a different brand for 3 months at a health food store on the Big Island last winter. Got home, surfed up to Amazon and bought them asap. UGH. They were so inedible, that I mailed one back to Amazon and tossed the one I'd opened.Flash forward almost a year, and I tried them again - getting just ONE bag. I'll be jiggered, but there is the same issue: the olives are devoid of moisture. They taste gritty, bitter and don't seem to hold up well at all when you open the bag.WHY I was able to buy these same Peruvian olives and enjoy rich, meaty, juicy olives for 3 months in Hawaii, and simply can't get them from Amazon, I don't know. Are these rejects? Are they just too old? No idea! I won't be getting them again.

Not What I Expected
Years ago there were olives from Peru called Botija sun-cured olives that had no added salt, and Natural Zing was one distributor of them. They were unique because, apparently, the oleuropein that gives fresh olives their intense bitter taste was almost entirely gone by the time these olives dropped from the tree and dried to the point where they wouldn't spoil. All other olives I have found have been cured by leaching the oleuropein out with brine or with dilute sodium hydroxide solution - the latter process gives us the common, mild-flavored pizza olives sold in cans. So finding an olive that is neither very salty or that is not a pizza olive has been impossible except for this one line of olive, that has apparently struggled to stay on the market because of the high price ($30-$40/pound) and the fact that most, but definitely not all, people can taste the bitter residual oleuropein, which spoils their culinary experience.I had hoped that these olives were the ones described above, but with a "touch of sea salt" and containing only the very small amount of oil naturally present in the above kind of olive, which seems most closely related to the low-oil Sevillano variety of olive. What I received was a bag of mushy, intensely salty olives, almost as salty as the notorious Moroccan variety, packed in excess oil that wets the bag. Although the ingredients list says "wildcrafted dried botija olives, sea salt", I doubt that the amount of oil in the product can be accounted for by the olives alone, particularly the low-oil variety I am familiar with receiving as Peruvian Botija olives.The bottom line is, as an olive connoisseur, I don't like the flavor of this particular product at all and would not recommend it, especially for this price.

They are simply amazing. A++++
I don't know what to say about these. They are simply amazing. These are truly a special product. I actually eat a couple of these a day, for a snack. I left them uncovered and they dried out a bit, but even still, they are amazing. They are gorgeous. I added to venison Chilli, and spaghetti sauce, soups. They have a strong flavor, slight bitter, but in a good way. YUM. It is one of those products you wish you'd discovered sooner, and I love them so much, they are going to be a staple in my diet.Love the way they are processed. For me they are a treat every bit as much as fine chocolate would be, and healthy, filling.
