Useful alternative to high salt baking powder / sodium bicarbonate. Not organic. Expensive?
I follow a very low carb / keto diet to keep my blood glucose as low as possible. Indeed lately I seem to be becoming almost carnivore. It concerns me that we need a balance of sodium and potassium (together with magnesium) in our diet, but in leaving out most vegetables I am missing out on potassium. I ordered this in the hopes that it will make my diet more balanced. Also, I cook low carb fritters composed of ground flax seed, psyllium husk, collagen, grated cheese and egg. The addition of this version of baking powder may lighten the mix and make it seem more like "normal" food. It will be good to render the taste more salty without actually adding to the salt in my diet.Cooking does not play a great rôle in my life, so I expect this little pot to last me some while. When it is exhausted I will follow the advice of previous reviewers and shop around on Amazon for something cheaper and maybe organic. I have mixed feelings about the packaging. On the one hand, I abhor unnecessary plastic, for my health and that of the environment. Glass would be so much preferable. On the other hand, since I don't expect to use this up quickly, it is re-assuring to have it in a tub that should keep it dry and usable for longer.

Does the job
Nicely packaged, small plastic tub with twist-top for 2 pouring option holes (sprinkle or larger pouring). Using instead of sodium bicarbonate for fizzy juice, does the job and good source of potassium.

Good for baking
My sister is studying baking and cake making. She has used this now several times from cakes to bread. It works as she hoped. It didn’t alter the taste either. Which she was concerned about. Size of the container is good for her, as she uses it often, for others, might be too large. Unless you use it in other ways like gardening.

Warning if your on a low sodium diet especially for medical reasons, don't use this or any salt alternatives can make things worse.

Works as it should but the lid is impractical
This is quite a large tub (10oz/283g) of potassium bicarbonate. It has a range of uses including gardening, wine making and baking. It is described as a direct substitute for baking soda – so that’s how I’ve tested it. My first observation was that the lid was incredibly difficult to use. I think it was supposed to twist to give a range of openings for sprinkling or pouring, but the product did not come out at all easily. I wondered if it was perhaps a little damp as it seemed to be a bit ‘clumpy’. I resorted to prising off the lid to be able to scoop out with a teaspoon. The product is much more grainy than the product I’m used to, but I don’t think this makes any difference to the overall performance. My baking worked just as it usually does so yes, I’d say this is a direct substitution option for baking soda.Would I buy it again – no. Apart from the completely impractical lid (I need to decant into a different storage option for this to be useful), it is much more expensive than ‘ordinary’ baking powder made with sodium. If however you need a product that doesn’t contain sodium – be reassured that your cakes will still rise.
