Will this work nice enough for measuring pour over coffee?

No. Only accurate to 1 g, not 0.1g. That means as you keep adding water/coffee/beans, the number takes forever to show a change.

Can you set a default for the units instead of having to change it every time?

No, there is not a default setting

What unit options does this model have?

Grams and ounces BUT the button to switch is on the bottom, which is highly inconvenient if you have to switch measurements during the same recipe

How often do you need to charge the build-in lithium battery? Thx!

Obviously that depends on how often you use the axle. I use mine 2 to 3 times per day (I admit that I’ve become a bit obsessive about weighing stuff, both for portion control and as an alternative to using measuring cups), and I get about a month out of each charge.
