I have a 1 ft copper pipe between the floor and a bathtub faucet. Is there a way to cut out a section of pipe and install this valve in the gap?

Answer is probably too late for you, but for future reference for others, you shouldn't use this for an existing pipe. You will not be able to cut the piece out of pipe and put in a regular sharkbite ball valve and get a good connection. What type of pipe does this connect to? Specifically is it 1/2" copper IN and 1/2" PEX OUT?

It is a 1/2" ball valve fitting. Use it with 1/2" PEX, CPVC OR COPPER. Both sides are 1/2".

Do not remove the white sleeve. Doing so could damage the teeth. Then you'll just complain about how they are pieces of junk after you installed them wrong.

Size for a 3/4 copper line how do i determine

Hello, you will want to measure the outside diameter of your copper line. If your copper is 7/8" outer diameter, it will be 3/4" inner diameter which will work with this ball valve or any 3/4" fitting. If the outer diameter is 5/8", you will need a 1/2" fitting.
