These are perfect. Add hot water and let them set. Instant “fresh” carrots. Saves a ton of work and mess. Very good flavor.

I purchased the dried carrots out of curiosity. I'm glad I did. They taste good and because they are chopped so small, i can throw them in some of the kid's afternoon snacks and they are none the wiser. I've found I can do that with a lot of the dehydrated products.

I am on a low-carb diet and like to make fried "rice" with riced couliflower and other riced vegetables. Fried fresh vegetable releases a lot of water that makes the fried "rice" mushy. Adding the dried carrot effectively absorbs the water and makes the fried low-carb "rice" so much better.

The size of the veggies is perfect for throwing into soups and stews this fall and winter. Wish they had other veggie mixes.
