Do you have to caulk around the edges?

I would, if you want a more finished look. And depending on how you use its probably necessary like other wood trim. I definitely caulk it.

Will this bend in both directions? Along the skinny and wide sides?

(seller here) It is very flexible like a belt (ships in a 20" square box) and then limited flexibility the other way. When bending the hard way it will easily bend to about a 60" radius. Please contact us for further information. -Flexible Millwork
