Can these be wired to be on/off switches for pickups?

Theoretically yes. For example if you want to do a Dave Gilmour 7-way mod on a stratocaster's 5 way switch, you add one of these and activate the neck pickup on demand. But if you are looking for a kill switch like the one buckethead uses this will do the job but it's probably better to get a different type of SPDT e,g the one that looks like a push/pull button.
