is this a good grinder for knife making?

Yes; with some modification, I milled a half inch steel plate (4"x4") and chamfered the edges at around 30 degrees to slope the belt over it. Then I bolted it to the flat steel frame of the sander platen. This will let you access bevels without the rest of the knife getting in the way.

Is there a small assortment of sanding belts/discs that comes with the unit?

No Jeff...1 sanding belt comes already installed as well as 1 sanding disc. I ordered http://www.amazon.com/gp/product/B000UEBPDW/ref=oh_aui_detailpage_o07_s00?ie=UTF8&psc=1 which is a nice assortment of belts at a decent price. I also order a set of discs. http://www.amazon.com/gp/product/B0000DD0KN/ref=oh_aui_detailpage_o06_s01?ie=UTF8&psc=1 which were an add on item.

Can the belt be moved 90 degrees to the vertical position?

Yes the belt can be moved at different angles up to 90 degrees.

What is the grits included?

100 Grit sanding disks, and 100 Grit 4" belts. You get 10 disks and 3 sanding belt included with the sander.
