Pacific Foods Original Organic Coconut Milk, Plant Based Milk, 32 oz Carton

This brand is so hard to find in groceries, where I live. This is the brand I believe Nordstrom ecafe uses for their coconut lime cooler drink, which is what I wanted to replicate. But this stuff/brand tastes amazing! Now I’m curious if the other brands of coconut beverages in grocery stores tastes just the same, because it would be easier to get and slightly cheaper. Because my first order, the carton got damaged when delivered and the beverage leaked all over -inside and out- the Amazon box.

I like that this is 100% coconut milk. Great texture smooth and light. Good quality in the amount you pay for.

I shook the carton vigorously and then poured it over my cereal. It came out as a weird, watery, transparent liquid similar to skim milk. And these slimy white bits where hugging the cereal flakes.It did not have the color, taste, or viscosity of coconut milk.Real coconut milk separates but it can be easily re-emulsified with a few pulses of an immersion blender.I poured the carton of milk out and ran it through my blender. The bits still weren't emulsified. I had to run the liquid through a fine strainer to remove them.I suspect this is because the coconut milk is primarily comprised of water, guar gum, xanthan, and gellan gum.I ended up tossing all 3 cartons.

Taste okay but not as milky or creamy as I expected. More of a very light and thin skim milk.

Good quality product.

Unopened container not necessary to refrigerate, unlike frigerated types of 'Coconut Milk', yet taste just as fresh as refrigerated 'Coconut Milk', & at a great price.
