Great Two-for-One Deal
By Janet P. March 18, 2014What a lot of useful information packed into one book. Just received my free copy today, and I was pleasantly surprised to see that it is much more than a mere cookbook. Yes, there are more than 100 neatly organized egg recipes that include sauces, snacks, desserts, and beverages, but there are also separate chapters for those on vegetarian or paleo diets. Helpful time saving tips are scattered liberally throughout the book too. I wish calorie content had been included, but at least prep and cooking times are noted for each recipe. For me, the best part of this book is Part One. The authors take the time to explain the different labels applied to purchased eggs, dispelling some popularly held myths and even describing the chickens that produce such variety. After 12 chapters of recipes, the book concludes with practical information for those considering raising their own birds. There is a generous list of websites, blogs, and books for further study. This book is a great bargain, especially if in the back of your mind you are thinking about small-scale chicken farming. Really, you're getting two books for one price. Learn how to raise your own birds and then cook up their eggs in delicious new ways. Yes, that's a great deal.

Great for jazzing up traditional egg dishes
I have been trying to entice my way from carbs to protein (within reasonable limits) during my pregnancy, and while some foods turned me off right away meat and eggs seem to be by staples for consuming a little more protein and a little less carbs. A girl can only have so many scrambled or hard boiled eggs. This book is really great because it is totally egg focused and comes up with some really creative and amazing recipes. I love that I can jazz up eggs (so easy to use and affordable) and make something new and extra delicious. I've done breakfast for dinner, but a true main dish made with eggs as the primary component, or even desserts based on eggs was beyond what I would normally come up with. If you want to get creative with eggs, this is your book. I still buy the same kind of eggs I usually get in the super market (despite all the explanation about various kinds of eggs), but now I can make easy recipes that result in salads and dressing, quiches, sauces (love this!), snack foods, and more.

A must for anyone who eats or cooks with eggs!
As I’ve always suspected, the big to-do about eggs (especially egg yolks) being really bad for you has been reversed. The latest studies show that eggs have a lot of nutrition and, what’s more, they are a good value, and we love them! This book will certainly help everyone get comfortable with not only preparing recipes that include eggs, but in learning the many different types of eggs, the chickens that produce them, and even how to go about choosing chickens to raise in your own backyard – they have different personalities! I learned what type of chicken produces the eggs I prefer and why there are eggs with double yolks. The recipe section includes the basics for newer cooks such as hard-boiled eggs and omelets, along with many things I’ve always wanted to try to make (mayonnaise) and adventurous dishes I haven’t even heard of before (Portuguese baked eggs). Although I would have made some very minor changes (example, the option of Greek yogurt instead of sour cream in some recipes), I was impressed with the number of great recipes and the tips given along the way. Anyone who eats or uses eggs in recipes should definitely check out this book!

Cover’s Beautiful, But…
No photos or pics - not even of the chickens, or their eggs. Also, “Know your Chickens” is just a list.

Eggs are protein too mmmm....
Great book I love how much you can make with eggs this book is amazing. I first got this book I wasn't sure how far it would get with me because I'm not a big egg eater. This book has many recipes that calls for eggs. I never thought I'd eat something that called for egg whites only, but with yummy seasoning and other ingredients it's pretty good. What I like about this book and why I bought it is because I love protein and normally I get that from meat. Eating meat all the time wasn't really good for me so my doctor asked me to sometime substitute meat for something else that has protein. This book saved me, and there is recipes in that call for meat to, just not as much as I normally eat which is good thing. The egg recipes really full me up which is another plus that I love. It normally takes meat, literally to make me full. I love eggs!

Great!
The egg cookbook was a very informative book! The information was very thorough and also surprisingly entertaining. The categories were also very helpful. Topics covered ranged from egg recipes, how to properly cook with eggs, and valuable information how raising types of chicken breeds such as: Amber Star Hybrids, Brahmas, Jaerhons, Plymouth Rocks, and even the Yokohamas. It also explained how chickens and eggs are prepared when they bear certain food labels such as pastured and organic. There is also a wonderful resources section about raising chickens, which contains books, periodicals, websites and blogs. However, there were a few things I did not like about it. The beverage section was not as full as some of the other sections. Only different types of eggnog and smoothies were mentioned when there are definitely more drinks that are prepared with eggs, such as cocktails. But this is a good reference book for some tasty egg recipes and a great resource on raising chickens. Definitely would recommend.
