Hi, how many sheets are there and is it double sided?

This is 1 sheet. Not sure about the double sided question but both sides are identical smooth surface if that’s what you are asking.

What can you cut this with?

As the listing description states. you can cut using a laser, tablesaw, jigsaw, drill, router, or bandsaw. I'm sure you are not limited to only these tools. A much simpler tool is probably enough to cut it. Perhaps other users may contribute to the kind of tools they use.

Can I use this to protect the top of a small night table? Are the edges smooth?

The edges (sides) are nicely finished, but they do meet the top and bottom surfaces at a hard "edge" if that's what you mean. The edges and corners are not rounded over. Just be aware that acrylic isn't very scratch-resistant, so if scratches are likely to bother you, you might consider looking for a piece of tempered glass instead.

Can this be bent if heated or will it just melt?

I bought the red acrylic sheet and it formed perfectly to the shape I needed by heating with a heat gun. No melting
