Can you only use one side of the pot?

No. The hot plate covers both sides of the pot, therefore the entire pot will heat up, stick to a single pot if you won’t be using both sides

Food grade stainless steel?

Yes! High quality stainless…nothing flimsy about it.

Is the pot made by 18 / 10 grade stainless steel?

the stainless steel in so thin that bends/dents very easily. Poor quality, I returned it. There are much better options (better HotPots).

Is it difficult to keep clean and is it lead free? Also how long is the cord?

Since the pot is not attached to the electric element, AND you are cooking in liquid, it is just like washing a pasta pot. Stainless steel has no lead in it. The cord is 45” long. We use a bright orange, heavy duty extension cord when we need one.
