Around 10 inches. I wouldnt go any further than that

Pretty much the same thing, model for model. I havent had any problems with this sharpening kit and it works well

How do you know howmany strokes per stone

Stones broke pretty easily. I ended up getting a similar design, but stones that had a metal platen. The stones in this model are just too thin. If you put a backer on, maybe it would last a few knives worth. If this is you budget, just get one that you pull over the blade with prefixed ceramic rods. I needed something better for my business, and went with a TSProf
