Oh My This is GOOD Vinegar. I didn't know what to expect and what I received I could never have imagined. When you taste it for the first time, you know it's vinegar BUT.... The flavor is hard to describe. I will say it's sweet, as vinegars go, with a taste that is reminiscent of chocolate, good chocolate, not cheap chocolate. Assertive aged vinegar with a pronounced tang, lovely in dipping sauce!

Worked well in a recipe I had that called for it. Flavor is unusual - I liken it to my experience with Fish Sauce, which smells terrible but adds remarkable taste. Tasting just the vinegar was initially disappointing but it worked well in the dish.

If you like Unami, this is your pick. It is a little too powerful for us, but when mixed with olive oil and herbs it brings out delicious notes.

I use it foe hot and sour soup. Great flavor.....more malty tasting with less "sour".

This is fantastic for making dumpling dipping sauce. So tangy and delicious! I actually add a little to the marinade for "drug eggs" too.

Even though I find it quite a bit pricey, it's not bad and has a good flavor. It pairs pretty well with dumplings, so I'm happy at least about that.
