There us no gelatin in this product! Mochi rice gives this product it's consistency. "Rice Powder, Sugar, Millet Jelly, Oligosaccharide, Red Beans, Mugwort, Enzyme, Emulsifier, Maltose, Corn Starch, Spice, Sorbitol"

Are these gluten free / not manufactured in a facility that processes wheat?

I do believe these are gluten free, but they are manufactured in Japan, so I have no idea if they also process anything containing wheat. Sorry, but you would probably have to email the seller to be sure.

How long can it last in fridge? unopened and opened

I never refrigerated them. If you keep them sealed, they last about a week on the counter without hardening.
