I was disappointed in this cake mix. Felt like a waste of 10 egg whites. the cake didn't disease anticipated and was dryer than I had hoped for. I have heard d that this product has been updated to 12 egg whites and it should raise. But this was not good.

Wow! Just… wow! Granted, before I attempted my first ever angel food cake- much more gluten free- I read a lot and watched videos before the attempt. This mix is so awesome. If you follow the instructions you cannot go wrong. If you whip the eggs to peaks and slowly fold in the sugar and then sift as you fold in the cake mix to the whipped batter you cannot go wrong. I did use an angel food cake pan- everyone said it’s a must and it worked for me in spades. Rose nicely- make sure you let it cool upside down for those two hours; must have something to do with that texture. It fluffed up so nice and the crust has that awesome angel cake flaky lace look and feel. It’s work but very very worth it.

This mix tastes just like homemade, non-gluten-free angel food cake! It isn't as straightforward as the just-add-water kind, but I am willing to go through the ten egg whites this uses for this level of tastiness on a gluten-free diet. I just used the egg yolks for scrambled eggs the next day. It doesn't bake up as lofty as non-gluten-free, but that is ok by me. If you are looking at this, you probably already know that most gluten-free baked goods aren't exact replicas. It still has a nice light texture and moistness level and is the next best thing for sure! A beautiful cake for Mother's Day, Valentine's Day, or any day! I have made it 3 times now and it hasn't let me down yet.
