- Pike Creek is aged for 10 years in a non-climate controlled warehouse where the intensity of Canada's climate plays a role in the maturation of this whisky
- Temperature swings force the whisky in and out of the wooden cask staves during aging much more than in a more controlled environment
- After 10 years the whisky is finished in rum barrels, resulting in a complex yet very smooth whisky
- Pouring a medium amber it is fragrant with aromas of caramel, clove, prune and spice. The palate is round and warm, with notes of toffee, spiced caramel and dried fruit
- Pike Creek is best served neat or on the rocks, or in a whisky sour
