What is the difference between this brand's bourbon vanilla paste and their regular pure vanilla paste? are they different?

The bourbon vanilla has an more intense vanilla flavor than the regular, comes through in all of your baked goods and smoothies. Also you don't have to use as much, you can adjust to your taste. I use this in all my baked products. However if you are making meringues and vanilla frosting/glaze you don't want to use this, use Nielsen Massey bourbon vanilla extract. Hope this helps. How long is the shelf life after you open it?

The first ingredients in this product are sugar and water -- this is basically a watered-down and sweetened vanilla extract. Why not buy extract?

Best reason to buy is its real vanilla bean seeds. Full of those little black specs of vanillaness, this is my favorite way to bring the taste and look of vanilla into my baking and frozen dessert recipes. 1 Tbl = 9 g sugar = 60 cal = 1 bean.

Is there actual alcohol in the bourbon vanilla bean paste?

Ingredients listed on bottle are as follows: sugar, water, vanilla extract, vanilla beans, gum tragacanth (a natural thickener). No alcohol!! Hope that helps. It's the ONLY vanilla bean paste I use for cooking and baking.
