Heath Riles BBQChicken Injection & Brine

An excellent chicken brine. I threw a whole spatchcocked chicken in it and a couple large breasts (no idea what the total poundage was, let's say it was around 10) for 48 hours and it produced some of the most juicy and flavorful chicken I've ever made. As the spatchcocked chicken was resting there were juices running down the board and onto my tablecloth, which serves me right for not putting the chicken on a cutting board with a juice groove. Not too salty or sweet, has that mellow chicken brothy sort of roundness to it, I would suggest a rub of strong herbs and garlic as a complement before throwing it on the pit. Definitely recommend this as a brine, I cannot speak as to how it performs as an injection, but I fully recommend this.

I’ve always cooked what my family considers to be pretty darn good chicken but this stuff took it up a notch. I shouldn’t give it such a good review because because I don’t want my family/friends to find out my secret.
