This banneton bread proofing basket is suitable for making standard-sized loaves, typically around 1-2 pounds of dough.

Q: What is the secret to getting dough not to stick when turned out?

Sprinkle the dough with rice flour and liberally coat the bread proofing basket with rice flour. The rice flour does not get absorbed like wheat flour so no sticking.

Q: Can the lining cloth be reused?

Yes, the washable cloth can be reused. But I prefer to flour the inside of the bread bowl without a liner. And then plop the bread dough into the proofing basket for the final rise. That leaves a nice design on the crust.

Q: Do I need to wash the sourdough banneton basket every time?

I don't wash my sourdough proofing basket. I shake out excess flour after turning out the dough. Let them air dry thoroughly, and brush out any remaining flour with the cleaning brush. Then store them in a dry place.
