Great noodles. Didn’t know I was eating low carb!
To begin, I was skeptical that there could be a low carb noodle that wouldn’t freak me out, but I was pleasantly surprised.I used these in a homemade ramen recipe which called for me to add the noodles to a pot that was off the heat but previously boling then simmering for about 10 mins. I did find that I needed to bring to boil and simmer on heat for another 5 mins or so to get the desired consistency.Noodles were slightly chewy but not rubbery nor did they fall apart.I cannot say that there were any off flavors. The broth was pretty substantial so if there was a flavor to the noodles, it was not overpowering.In short, I felt like I was eating regular ramen noodles. If you are going low carb and need a ramen fix, these are well worth purchasing.

The media could not be loaded. I found it yall... this is it right here!! As an avid ramen enthusiast, I have always loved ramen, but enhanced ramen. The different ways to create it. With that said, due to a gastric sleeve surgery, I have to now limit carbs and I thought my ramen days were over. I used the "i" brand of low carb ramen that is 40 bucks for six packs but then I saw this. Hands down the best substitute ramen you can get on the market. The texture is awesome, the ability to absorb flavors is outstanding, and the nutritional value is amazing.Quick tip, to get a more straighter ramen, I boil for about 11-12 minutes. For more textured curly ramen, I boil for about 7 minutes. That sweet spot for that in between is about 9-10 minutes. Thank me later.**********************UPDATE*****************I might as well switch to my other brand because they have upped the price since this review from 14bucks to almost 20. Not cool. Luckily I found another brand for 12 bucks that is with the same ingredients!

Best noodle replacement I've found so far
If you've been on the hunt for low-carb noodles for a while you know that NONE of them are a direct replacement. There's always a trade-off. I have tried several products, and this one is my favorite so far. BUT, let me give you some tips on how to make them:-The package says to boil them for 7 minutes. Do 8 or 9 and they will be much softer, comparable to al dente pasta. The texture is far better than konjac noodles.-Do not use the water you boiled them in for broth. A lot of odd flavors end up in the water. Dump it out and use a nice broth or just season them with no broth like I did.-The flavor is kind of eggy to me. Not bad but a little odd. Use plenty of seasoning or a flavorful sauce and you will be happy. For mine, I used a chicken ramen flavor pack and some chili oil, which was just enough.Keep in mind that these aren't store-bought spaghetti and you'll have to experiment and put in a bit of effort, but it's worth it. I have a feeling a lot of the bad reviews are from people who were expecting Barilla pasta or just can't cook.Btw, the bowl in the picture is two packs cooked out of the six.

Not my favorite
Hmmmmm, this is a hard product to review, in all fairness I think it is a me problem and not the noodle's fault. I bought these as a noodle substitute due to trying to sustain a lower carb lifestyle. I had really high hopes. but I was a little grossed out. When you cook these they produce a thick gel like substance, and to be honest, I couldn't get past that. I tried rinsing them off and got even more grossed out because it got on my hands .By the time I had gotten enough of the jelly like substance off to eat them, I was just too grossed out. I did eat two bites and the flavor was tolerable, but I couldn't get past the my first impression. If you have a stronger stomach than I do then these may work for you, but for me they are a no go. One last thing to add, the packages are very small so if you are expecting something the size of a pack of ramen noodles, you will be disappointed.

Not my favorite
Not a fan. I was hoping to use these noodles with Thai Peanut sauce as an alternative to rice noodles. They were ok, but tasted like boiled eggs to me.
