How long does this take to assemble...for someone not so great with assembly?

No more than 20 minutes. Easy to follow instructions. Even if it takes longer the directions we’re simple. All holes drilled and ready for assembly

Are the shelfs adjustable?

They are not adjustable. Holes pre-drilled in both shelves and metal frame

what is the distance from the ground to the bottom of the first shelf?

I don't remember cause I am not there until July 28th but I can tell you that it is not. more than 4to 5 inches.

Does it fold up for moving?

NO. this unit is screwed together. all shelves are in a fixed position in the frame. no folding. sorry.
