Excellent Japanese knife.
Purchased this because I wanted a Japanese style knife to replace my worn out santuko. With the recent price reduction, I could not resist. The knife documentation states it is a 6.4 hardness, but does not state the edge angle. This is a forged knife with a heavy bolster and is well balanced. I found the grip to be ergonomically comfortable. Upon arrival, the knife was not quite as sharp as I like, so a little honing was necessary. I would buy this again without hesitation.

Really sharp!!!
I cut myself the first time I used this knife. On the lower edge, near the handle. I can say firsthand that it's very sharp, barely grazing the edge. I like the weight and how it feels, and it looks stylish, like a fancy Chef knife.

My go-to
I have used this style knife (cheap versions) for 20+ years. I was tired of using cheap knives, so I chose to buy a better one, this one. This knife is very easy to use, very sharp, and a joy to hold. The balance is great and it cleans very easily. It will cut through a sponge if you're not careful. I'm very happy with this purchase.

Good and affordable chef’s knife

Good knife, but heavy
I want a real Mezzaluna style knife, this is sorta it, but it's kinda heavy and bulky. I would prefer a more lightweight style Mezzaluna knife.This knife does come razor sharp and ready to work. I have not re-sharpened it yet, but we have used it a fair amount over the last 4 months and it's still good and sharp....we only hand-wash knives, they don't lay in the sink, etc. We take care of our utensils and cookware.Overall, this is not a bad buy. Just know it's heavy and bulky.

My first professional chef knife, I didn't know what I was missing.
I was lured in by those recent Viking-like clever knifes, but after researching, smart marketing and flashy knifes don't equate to a high-quality knife. I know a $100+ knife would likely be superior, but this knife exceeded all my expectations. My first use was cutting Carne Asada steaks for a fajita dish, it cut through the meat like butter, one swipe of the blade through roughly an inch thick cut of meat. I also bought this to help me process chickens. It is essential to have a sharp knife for humanly bleeding out the bird with minimal stress to both me and the animal. I just hope when the day comes to re-sharpen this blade with my Arkansas stone that I can preserve the sharpness it has today. Great workmanship at a great price. Thank you.

Large handle
Heavy knife, large handle to grip and nice quality knife overall- works well for someone with large hands.

Great knife
Dangerously sharp and easy to use. I was tired of my knuckles hitting my cutting board and this did the trick. It has become my "go to" knife. So far I have only cut myself once......
