Don't skip adding the milk powder - it's worth it
This high temp milk powder has been great for sausage making. It helps as a binder for the meat, while helping retain moisture in the sausage. Once mixed into the meat and cooked up, I've never been able to taste the powder. For me, it's a necessary step in making sausage.. and worth the cost.When mixing in, the powder dissolves easily without any issues. Directions are printed on the label, so you always know how much to use.

Great addition to some sausage recipes
This NFDM is a great addition to some of the sausage recipes that have fallen short of really combining and sticking together. It has added to the bonding of the grind and is recommended by many sausage makers in recipes. Going to be a staple in my sausage making recipes now.

Great Product

Venison Kielbasa..
I've only made venison kielbasa for the 2nd time. The first time I thought the kielbasa was a little to dry. I wanted to come closer to the venison kielbasa a small sausage market used to make for me. The owner died unexpectedly, and I already used to make other kinds of sausage, but I wanted a better product. This dry milk powder filled the bill. The sausage was plumper, moister, and amazing. The picture shows the kielbasa after smoking for several hours. The cooking process has to stop and they get an ice water bath, and in the 2nd photo they are air drying before being refrigerated and eventually vacuum sealed and frozen.
