any reason I couldn't install these upside down so there isn't a lip on top?

I see no reason why you couldn’t. There are lips on the front of the shelving as well

How much weight could this hold? Several stacked books? Also, would this be able to be installed using adhesive mounts?

Everything depends on how you hang them. If they're in a stud, you could put lots of weight. With a wall anchor, not as much. Self adhesive strips might hold spices but not much more

They’re so pretty but i live in a dorm so i cant use them with screws so i used two different mounting tapes and they fall hours later or the next morning it feels like nothing will stay sticking on them💔
