Is this lid tall enough so you can roast a whole large chicken?

Yes the Lid is tall enough that you can fit almost any size Chicken in it! I have managed to use mine twice for cooking my Christmas Turkey (approx. 8kg) in it. I agree with other's in regard to the lid handle (would be better on the sides like with their other roasting dishes/lids but I cook the rest of my oven food when I take the lid off for the final browning phase and after when I have taken it out to rest (with the lid back on). I have found it works best if you place about 100ml of cold water in the bottom at the start of the roasting and to give the lid a few taps before removing it so that the steam drips off.

Does it work on an induction hob

Technically it is not designed for use on a hob (induction or otherwise) but being an all metal design should work but if anything goes wrong you would not be covered by any guarantee or warranty.

Will this size pan take a 12/15kg turkey?

Sorry to have to tell you that it is not large enough to take a 12/15 kg turkey, great for roasting beef, if we roast a chicken in it we leave the lid off, would not like to be without it.

Wondering what size I would need for roasting a 3lb-ish chicken?

This will easily cook a 3lb chicken.I have cooked a5lb in mine (32x22).
