One of the most beautifully written and detailed cookbooks I have ever seen. Phaidon is a good publisher of cookbooks so I wasn't surprised but it's definitely my favourite cookbook. It tells you a lot about the context of why dishes are eaten in those countries, something that's extremely important when considering Nordic cuisine and eating habits both now and in the past. Some of the recipes are obviously impractical (I'm not gonna go ferment some shark for my dinner for example) but the majority are doable and delicious. Magnus Nilsson is a genius, if you liked the Chef's Table episode you'll love this!

Great book, recommend to cooks and anthropologists
Excellent book with superb recipes. I'm dinging one star because the intro was badly scuffed and muddy. That's no fault of the book, the author or the publisher, so it would be grotesquely unfair to ding more than that. It's also very unlikely to repeat, so it would be unfair to imply otherwise to those reading reviews. The recipes, as I've said, are superb and the cultural information and backstory make this book compelling.

Fantastic and comprehensive encyclopaedia of Nordic cookery.
A wonderful cook book !! Fascinating recpies and easy to follow. 700 pages of gastro fun with everything from the simple to the bizarre. I have used the recipes for the gravlax and the pickled herring and they both worked wonderfully well. After several years of wasted effort trying to get these two things right, I have finally achieved it by following the instructions of Magnus Nilsson. He has certainly triggered an interest in nordic cookery ! A highly recommended book and great value for money. If only his restaurant was closer to the UK !!

Beautiful food and book.
Bought as a gift. Seller despatched this very quickly. Although ostensibly a cook book The Nordic Cook Book has lots of background to the provenance of the ingredients and the Scandinavian way if life past and present. Recipes are based on similar ingredients to our own but used in unusual combinations and presented very differently. This serves to make the food exotic and accessible. The many colour photographs are very welcome and atmospheric. Magnus Nilsson is a god - a culinary Thor to be precise.

An excellent addition to your cookbooks
An excellent cookbook full of variety and traditional scandinavian food. Exquisite combination of cultural information and food recipes, albeit without many pictures. The book is structured well and subdivided into specific sections (i.e. specific meats/fish rather than simply "meat & fish"). While I do not agree with whaling etc, I think it is a shame that the rating of the book is so negatively skewed by the disgruntled animal rights activists.

If you have even a slight interest in Nordic cusine, get this. So many options and lots of interest in the different regions. Great book to have.

Comprehensive, but full of errors
As others have said, indeed it's a beautiful and comprehensive book. I can't help but think it could have been a bit less weighty by leaving some things out (e.g. nordics poach eggs the same way the rest of the western world does, so surely we don't need another recipe for that!). The book is riddled with spelling and other editing errors, and some recipes have complete steps missing, which means that both the author, editor and publisher have scrimped on proper proofreading and testing of the recipes before going to print. The bread section is a disappointment, with scant reference to true sourdough methods and the recipes are all yeasted approximations of the the real thing without explaining why. All of that said, it is an achievement, and for the price it sells on amazon I would say it's a good buy.

Makes a great gift
Purchased as a gift for a colleague, so I have not used the recipes myself. The book is well constructed and contains an impressive collection of foods and information, I may buy one for myself.

Como todos los libros de Phaidon, está editado de maravilla: bien encuadernado, papel bonito, buen diseño, dos cintas de punto de libro, textos excelentes... Megnus Nilsson es un chef de culto que recoge en este libro lo mejor de la cocina nórdica, con fotografías realizadas por él mismo (lástima que no hay fotos de todos los platos). Genial para renovar el repertorio de cocina con un toque nórdico exquisito

Massive book, good content
While some ingredient might be difficult to put your hands on (whale meat, etc...), the book gives a complete overview of the cuisine of this part of the world and many recipes are easily achievable (and substitution for other product shouldn't be too difficult). Tried a few and will continue. I particularly like the stories around the recipe, makes the reading much more interesting.

Love the book
Love the book, frequent couch reading! I'm from a Danish background and have struggled to find English language recipes to recreate some of my fondest dishes that my grandmother would make while I was in Denmark. I made a roast pork with crackling, together with red cabbage and sugar potatoes for Christmas Eve dinner and everything was right on. Some may balk at some of the more "eccentric" recipes like whale and seal etc, but this tome covers it all! I'm looking forward to experimenting with more recipes - thanks Magnus for what was clearly an epic effort to put this together
