How do you shorten the wires but keep the end pins attached?

What I usually do is just fold the wire, but if you really wanna shorten them heat the part of the wire that you wanna get rid of the rubber part, cut the excess amount of wire and solder the both ends together. Put some rubber or tape on the naked part of wire as well.

I need a 30 pin male to female extention for my LCD controller board but it needs to be 1mm pitch, will these do? or are they to bigger pitch?

I have bare wires from various hardware , how do I make the connection to these wires in order to put the male pins into the Arduino?

You could use a breadboard or for a more permanent solution, cut the wires and solder them to the bare wires (or twist them together) and wrap with tape (preferably electrical tape).

Is the inside cable twisted or is it a single cable?

It is braided cable in my ones, others i have seen are single strand - Don't buy the even cheeper ones!
