Texture & Flavor
Always dependable and never a noticeable beef taste. Now brand never disappoints. I occasionally use it to lend body to sauces and soups. I often use this gelatin with fruit juice and fruit, or flavored milk, or sweetened spiced nut milk, or store broth, or homemade stock or soup.1-1.5 tablespoons gelatin per cup of cold or room temp liquid. Sprinkle the gelatin on top and let it sit until the gelatin powder is fully wet. Then stir the mixture over gentle heat until the gelatin is fully dissolved. This makes a firm "jello" that can be cut into squares and picked up as finger food. I love the texture. I love having cold savory or sweet jello cubes to snack on. It seems good for my health, joints, skin, etc. But I'd eat it either way, because I love biting into that firm wiggly texture. It's akin to gummy candy texture, but a lot healthier and without the sugar overload.*Folks who are accustomed to commercial sweet fruit flavored gelatin desserts may want to add sugar to taste.You can also reduce the recommended water in a commercial gelatin dessert mix, and add extra beef gelatin to make it firmer.

Makes really yummy low carb desserts!
Works well mixed in cold drinks, sets up well (just like Jell-O) when mixed with very hot water, then chilled. I like that I can make my own chemical and coloring-free low carb desserts (1 cup boiled water, 2 TBSP of this product -mix until dissolved, cool slightly before adding your choice of sweetener and lower sugar mashed berries or lemon or lime juice, and 1 cup Greek Yogurt. Mix well and chill). I like the nutritional profile of beef gelatin, and that it does not impart a beefy taste to my drinks and desserts. Fits well into my meal plan as I'm trying to increase protein.

Makes Heavenly Coco-Chocolate Jello
This gelatin is great, just like all the other NOW products I've bought in the past. In the winter I like to drink a mug of hot cocoa at night. Now that the weather heating up, I switched to cocoa jello for a cold and easy dessert that costs pennies. It's made exactly like hot cocoa (heat water to boiling, add cocoa mix, add honey or coconut sugar) with one final addition of a spoonful of gelatin powder. Mix it well, refrigerate it overnight and you've got cocoa jello! I recently tried substituting a can of coconut milk or the water, and OMG it was sinfully delicious. To make it less rich, use chocolate Almond Breeze. To make it healthier, use cacao instead of Swiss Miss cocoa mix (although you will need more sweetener). Or try making your own coconut milk with organic shredded coconut. Top it with a spritz of whipped cream and it's good enough for guests!I don't know what it is about this gelatin, but it's very filling, so it could be a dieting aid if you're trying to keep an eye on the scale. Instead of eating ice cream at night, I eat my cocoa jello and am satisfied. But don't stop there. Buy organic juice and make healthy jello without food dyes and unpronounceable ingredients. A 1 pound bag lasts a long time, so you can go crazy experimenting. I originally bought this gelatin for the health benefits I read about (healthy skin, nails and hair among many other things), but I'm addicted to it because of the delicious and easy-to-make jello it makes.

Beef Gelatin Comparisons
If you are wondering which kind of beef gelatin to get here are the comparisons after 3 years of buying beef gelatin.We bought beef gelatin back when it came in the 5lb bag and liked it. Then when we needed more we couldn't find it so we ordered the Great Lakes Beef Gelatin that comes in a can - both the regular (red can) and hydrolysate (easy to mix - green can). Then we found Now Foods beef gelatin which some are saying is the same as what used to come in the bag. I'm not so sure about that.We sometimes like to make very firm gello with juices or coconut and sometimes like it in a drink or coffee. Here are the differences:>The original bagged had to be heated and dissolved well but you could make it firm or not depending on your mixing ratio. Not good for mixing in drinks.>The Great Lake Hydrolysate (green can) is great for mixing with cold or hot drinks as it dissolves easily and quickly so this is good if you need it daily for joint care.>The Great Lakes beef gelatin in the red can makes great firm jello and dissolves a little easier than the bagged stuff we used to get when heating for jello. This is important because if you heat on too high of a temperature, simmering or boiling will greatly decrease the flavors and quality of the juice. Great Lakes in the can disolves better when heating on low for great jello BUT it is not good for mixing with drinks and coffee.>NOW Foods beef gelatin (the kind this review is for and pictured above) is a good all around gelatin for making jello or mixing with drinks and coffee so you do not need to have two kinds of gelatin around. The only draw back is we couldn't make our super firm jello we like without having to add lots and lots of the gelatin in the juice and then if you add too much it will not completely dissolve. For most people who like normal jello this is not a problem and it makes great light to medium firmness jello.All these beef gelatins had a good taste far superior to the knox crap in the store which I remember tasted nasty. I do not eat pork anymore and find the beef gelatin to be much better in every way to the pork gelatin so even if you do eat pork I recommend trying beef gelatin. If you need firm gelatin for gummy bears or stiff jello get the Great Lakes in the red can. If you want it as a supplement for drinking get the Great Lakes hydrolysate in the green can and if you want one good for most uses get this NOW Foods beef gelatin. If I could give 4.5 stars I would but have to dock it because we like super firm.OK, I'm done.

What a value purchase!
Best way to extend bone broth, make jellos and such. Very mild to no flavor and so economical to use. I'm forever cooking drumstick for my hubby's collegen fix and this is another way to help those knees.
