Nice 8" chef knife, factory edge is excellent
NOTE: this is a review of the 8" chef knife by the same company, Amazon is confused about what I ordered. My go to kitchen knives are AG Russell's, great, but too thin for some tasks. I have a Ken Onion Rain for beefier work, but took it to the mainland since it was rusting in Hawaii, so I was down one working knife in my block. It is a good knife. Not sure about the metallic glass story, but it handles well. Balance and rocker are exactly right for working with it for several hours. So far I am still using the factory edge, but will probably hone it on a steel before my next dinner party. Highlights so far include cutting grass fed beef paper thin and removing the breast from a huge turkey.
