Is this suitable for use with an artesian well? (i.e. will it stop well at about 10 psi from overflowing)

This could stop flowing water but only if the 1/2" vent tapping is plugged and the gaskets supplied are used plus some sealant around the electrical wires that pass thru the well seal. Close attention to detail is required,

Is the 1inch center hole for 1" poly pipe which has a 1.125inch outer diameter? whats the 1/2inch hole for? is the 1inch fip for a cable gland?

Yes thev1” center hole is for the pipe to the pump. The 1/2” tapped hole is for a vent so air can move in and out as the water level changes in the well. The 1” tapped hole is for the conduit or electrical cable for the pump.

Will this fit a pvc pipe with an id of 5 7/8"?

If you push the bottom two plates together on the well seal then they should just fit inside your 5 7/8" ID PVC pipe. This is border line and we trust your PVC pipe is the round and not egg shaped so the well seal can fit.
