Would this be to much for a 5gallon?

This depends on the specific size of your tank, if it is square then it may not fit, if it is rectangular maybe it will work well, because the size of "Small Soul Canyon" is 12 inches in length, 6 inches in width and 7 inches in height, if your tank size is bigger than this standard then it will work very well. I took a video you can refer to, the size of the tank used in the video is 13.7x8.6x7. The capacity is about 3.6 gallons.

Do the moss and glue come with the items

It is separate. Figurines only.

They are approx 10” tall. My order arrived damaged and was never able to add them to my tank. The items did look very cool
