Amazing cookbook FULL of recipes!
It is not easy finding books with Gluten free recipes that is actually full of recipes. Many I have looked at, about 65% is information I don't need, how to measure, how to weigh ingredients, etc. I use Namaste all-purpose flour for gluten free recipes, which I've had pretty good luck with. I have made many of Nichole's recipes, they turn out great. The extra flakey pie crust (go to her website [...] ) is amazing! The best crust I have found, I found if you are using it for a pie that has to be baked for a while (peach, cherry, apple), don't precook it as the recipe states, it will be over cooked. Make the pie, poke wholes in it then put your filling in and bake it.I've had to be gluten free for years now, I grew up with a Grandfather who's family is from the Ukraine, we would eat pierogis for Christmas and weddings, or just because we're craving them. The pierogi recipe in here is great! It is much easier to roll than regular dough as it doesn't creep back at you (I have fond memories of my grandfather swearing in Ukrainian at the dough). Definitely get a 4 inch round cutter like it says in the recipe, it's not as elastic as the gluten dough. I made them the other night with my 16 year old autistic daughter. She enjoyed making them, still working on proper sealing with her, on the plus side, a couple of them weren't completely sealed, but unlike the gluten dough, they still held together, filling and all, which is great! No more losing pierogis from not being completely sealed, YAY! I have my own filling I use so I didn't try Nichole's filling recipe, we also put sour cream and bacon on our pierogis. I'll be making the 'basic dough' recipe from Nichole's book to make pork pies, can't wait to eat them! I'm also looking forward to the crab rangoons, wontons and potstickers, which i love but can't have in restaurants! Thank you Nichole for you diligence in making such amazing gluten free recipes!!!

A Must Have!
I have purchased every GF cookbook Nicole Hunn has written to date, and they are spot on in every way. So much so, that when presented with the opportunity to pre-order Small Bites, I jumped, without even knowing what recipes it included. My frustration with many GF cookbooks out there, is that they focus on either:A. recipes that naturally don't contain troublesome ingredients (thanks, but I don't need a special cookbook to discern these recipes), orB. they simply substitute a similar, easily obtained ingredient (like almond flour) whenever all purpose flour, etc. is called for. Nice try, but this just doesn't cut it for flavor, texture, etc.This is where I absolutely LOVE the work Nicole has done with recipe development in all of her cookbooks. Some of the recipes may sound a little complex for those un-initiated to the world of GF cooking (yes I'm speaking to you, you lone 1 star reviewer), but she takes the approach of not being satisfied with "good enough". Her goal (at least what I think it is), is to EXACTLY replicate favorites. From the flavor profile, to the texture, to the levity and denseness. You miss NOTHING with her recipes. Her books have become my primary GF resource to cook for my family and others. If GF is good for my family, I should be proud to serve it to others, and I do! I now have quite the following among my 2 daughters school, swim and water polo friends. They ALL want to ride in our car to see what snacks I'm bringing along. Their teachers look forward to my luncheon contributions, and the dishes I bring to family gatherings are well-received. Not because the food is "good for being gluten free", but because the food is just straight-up good! And now, with Small Bites, I have a whole new list of appetizers and goodies to add to my repertoire.

Small Bites - Another Home-run from Nicole Hunn
Another fantastic book by Nicole Hunn (I have them all). If you or someone you love is gluten free, you really cannot go wrong with any of her recipes. This book is great collection of appetizers and small bites. I'm looking forward to trying almost every recipe. The books has beautiful photography (lots of color pictures) and clear, easy to follow recipes. Unlike some other books on the market, it's not full of what I call "filler recipes" - which is when you buy a gluten free cookbook but it's full of a bunch of recipes that are everyday basics that didn't have gluten in the first place. None of that here - you get what you pay for and that's a book that is full of amazing things you've been missing... and now you have a way to make them yourself!

Another must-have for the celiac's library
I am so excited Nicole finally wore another cookbook! I was diagnosed with Celiac 8 years ago and I have purchased nearly all the GF cookbooks out there. The recipes have yielded mixed results and wasted so much money on pricey ingredients only to have the items mediocre to unedible. Several years ago I was searching for some way to recreate red licorice as gluten free as all commercial red licorice has whe flour as one of the main ingredients. I have always loved/craved this stuff. I was sure I would never eat it again. A google search yielded a recipe by Nichole Hunn and my obsession with Gluten Free on a Shoe String cookbooks. I own all of them and was thrilled to add this to my collection. The instructions are very detailed and straightforward. Not the easiest recipes out there BUT the little extra preparation time pays off in taste every time!!! And they've always worked for me. The couple of times the recipes failed me, it turns out I was to blame. Followed carefully, these recipes work every single time! The results are so good I have been able to transition the rest of my family (including a picky teenager) to solely gluten free. And when I entertain I don't even have to divulge that the food is gluten free as no one can tell anyway. This author's books are a MUST for anyone who needs to avoid wheat and loves good, delicious food.
