Is the grid light or dark? I am looking for light. Thank you.

The graph lines are blue and about the same "darkness" as what you see on letter-sized graph paper.

What are the best type of markers to use for these? We need to make sure nothing bleeds through.

I use Mr Sketch Markers. I have never experienced bleed through.
