Encyclopedic View of South American Cuisine in Very Small Type
This is an outstanding survey of South American cooking. My only complaint is that the font is very small. Now that I'm older that has become an issue! It also makes the book less practical for use in an actual kitchen because you can't just look at it from down the counter while you're cooking to check on an ingredient or instruction. You have to be right where the book is to read it.That said, the range of the book is impressive. I really appreciate that the author, who is a well-known chef, kept the recipes in their typical/traditional form rather than in more elaborate and complicated restaurant versions. These are the versions of the dishes that would be prepared in people's homes, not in a fully-equipped restaurant kitchen using ingredients that would be rare and expensive even in the home countries.If you find this opus daunting, consider La Gran Cocina Latina (it's in English) or Elisabeth Lambert Ortiz's Complete Book of Latin American Cooking. Both are outstanding and will have authentic recipes for the Latin American dishes you are longing for! The type in both those books is also "normal" size, which makes them more accessible to those with blurrier eyes!

Penguins
This reminds me of the 4th grader who asked his school librarian for a book about penguins; she gave him the “P” volume of the encyclopedia… to which he responded, “I think that’s more about penguins than I wanted to know.”

The Best Latin American Cookbook!!!!! Highly Recommend ❤️
This book is filled with hundreds of receipts from all over Latin America. It even includes a little bit of history to better understand the origin of the dish. My only small complaint is that some of the recipe titles are in English which makes it difficult to find as a native. Other than that, this book is amazing! Highly recommend!!!!

Looks cheap
The editing and the paper used for this book makes it look cheap.Even the ink used is awful.Don't buy this.

Impressive but impractical
This is an exhaustive and impressive cookbook, but the lack of substitutions (as far as I can tell) makes it difficult to find matching ingredients for many of the dishes outside of specialty stores.

Not by country.
I wanted to order the Spanish one ,but USA Amazon only sells the paperback.I glanced to the recipes, wish they would ordered by country.Also did not like that national dishes from Bolivia are under other country well known for cultural apropiation.I like better the other Latin American cookbook "Gran Cocina Latina".I will not keep it,instead give it as a gift.

A comprehensive encyclopaedia
A comprehensive encyclopaedia of southern American dishes. I’ve no issues with the type (as other reviewers noted) and was pleased that recipes have reasonable subs included

Great selection of Latin American typical dishes
This book is very well written, which tells you that a significant amount of quality research was done to publish it. The recipes are well arranged, the ingredients and the instructions for each recipe are well detailed and very easy to follow. To Virgilio and his team my heartfelt congrats for an excellent job in researching and publish this great cookbook!!

Really bad quality of printing and paper
Low quality of paper and the printing of the cover is starting to disapear after some readings. The content is nice but the paper quality is much lower than expected for a book of this price. I also have The turkish cookbook and the quality of this one is amazing, so as the price was the same and the editor was the same I was expecting similar quality. But it is nothing like the other. Truly disapointed, wont advise anyone to buy this edition.

Really pretty book
I have cooked a lot out of the book amd found most recipes are quite blank and involve a lot of time making it. I would like to rate it more, as it is such a nicely presented book.
