Will this work for shredding Beets for Borscht??

The reason that we bought this grater was because my wife wanted a more robust hand-grater that she could use for grating beets, onion, and potatoes for the various dishes she makes not the least of which is borscht. She made a pot of borscht yesterday and used the grater for the beets.

Can this be used for slicing? like potato chips? Or zucchini/cucumber round slices? Is the slicer like thing on the side protruded from the surface?

I sharpened the slicer with a mill file and I now make sliced cucumbers and even carrots all the time! It's faster and more precise than getting out my razor-sharp chef knife.

Will this shred cabbage into thin strips for coleslaw? Which side do you use?

I haven't tried shredding cabbage, but I would think it would. It's nice and sturdy. I would use the front side that grates cheese.

Is this grater solid/ridged and not bend/twist around when you use it?

It’s solid/ nice grip on my cutting board, a little wider base that adds to the stability; didn’t realize how much I needed a new grater until I got this one
