I always step my yeast up by putting two or three tablespoons of sugar in a quart/liter of 80 F water on a stir plate. This yeast takes off in about an hour, and when you pitch the liter of activated yeast in your mash, it will probably be fermenting vigorously in 2-4 hours.

Q: What is the temperature range for storage of unused yeast?

My beliefs run contrary to the mainstream. I don't refrigerate or freeze. Store in a cool dry place. Cut the corner from the Red Star bag and put aside enough for a month in a ziplocked bag. Squeeze the air out of the Red Star bag, fold the corner over a couple times and paperclip. Put in a drawer, cabinet or box that is dry and out of direct sunlight. Do your daily work from the ziplock. Replenish as needed.

Yes it is. There is no expiration date.

Q: can this be used for making wine?

Not recommended for making wine. You may get unwanted flavors in the finished product.

Heathy yeast

Yeast must be healthy. Proofed up real well and started fermentation on 10 gallons of peach mash within 12 hours. Did well even at 100° mash pitch temp.

Yeast is not 100% lively but not totally dead. After about 3hrs i get decently good activity if i use 4 tablespoons of yeast and sugar water. So there is some nutrients with the yeast so idk i suppose that is good tbh
