Amazon sent me used/returned products
Like the traditional 3 piece pasta roller set, these are well made and function as advertised. But - and this is Amazon's fault, not Kitchenaid's - I received a used set. The box, which also functions as storage, had been torn open by the prior recipient. I won't remove stars in a product review for Amazon's bait and switch, as they function and weren't filthy, but it's still gross and they should have been sold as refurbished. Tips: 1. Always use Italian 00 flour. Some people blend all-purpose with 00 in varying ratios which is fine. I prefer to use straight 00. 2. You can underwork, but not overwork pasta dough. Work the dough vigorously on the bench before resting in the fridge, then do 15 folding cycles through level 1 of the roller attachment. 3. As you thin the pasta periodically you will need to dust with 00 flour. Failure to keep the dough dry to the touch will result in the pasta sticking to the rollers, cutters, and itself. When the pasta will no longer accept flour, it is dry enough. 4. Go to level 6-7 for nearly every pasta beyond those like lasagna which require heft to stand up the sauce/meat/preparation. Raviolis in particular are more delicious the thinner the pasta. 5. If you choose to add herbs to your pasta dough, use about one dense handful of chopped herbs per pound of pasta. If you use less you will see, but not taste the herbs.

More options for cutting your own pasta with your KitchenAid stand mixer
These are heavy, well-made tools, imported from Italy like the other KitchenAid pasta attachments. See my review of the 3-piece pasta roller/cutter set for the essentials of using these tools. This pair of cutters doubles the number of different types of homemade pasta you can cut; if you have both sets, you can now effortlessly create spaghetti, fettucine, capellini, and lasagnette. These last are like a wider fettucine; this cutter is also a good size for chow fun noodles, which are supposed to be thick, so you can roll them to a mere 2 and they will be fine. Some people have noted difficulty with the capellini cutter. You do need to take extra care with this one, as it cuts so finely; don't forget that dough for capellini will need to be rolled out much more thin than that for wider noodles. Go as high on the roller as you can, and be sure to flour your ultra-thin dough sheets very well before cutting.

Angel Hair pasta!
This is a great addition to the 3 piece pasta attachment set. You need that set to roll the dough, but this set gives you 2 additional cutting options: Capellini (Angel hair) and Lasagnette (wide ribbon noodle).

Quality issue
I was using my roller and it broke and wouldn’t turn. Make sure you get an extended warranty it is not a quality product that can withstand the rolling on a regular basis.

Wide Pasta Cutter wider than normal...
The Cappelini cutter is just like Angel Hair noodles’ width which was exactly what I was looking for! Haven’t used the wide noodles cutter yet... but it looks wider than normal. That’s not a problem for how we like it... but not everyone’s the same! I’d still purchase this set again for the width of the cappelini cutter!

very useful and practical product
I had one piece (without option to cut it into smaller pieces). It was really nice, yet cutting it later into proper size pasta was a bit messy. Therefore I have decided to buy the other two pieces that cut it into desired pasta type. It works as charm, now preparing our own pasta takes very little time (apart from preparing the pasta dough (few minutes), then wait around 1hr, then roll it and cut it (now takes around 5-10 mins). The only drawback is that there's always a bit of cleaning all over the place and... whenever you to restaurant, you can easily tell that your paste is far better then what they serve :D. If you like good pasta, made of good ingedients, and you're able to invest a little bit of time (20 mins + some waiting time) - go for it. This is one of the most often used addon to our kitchen aid machine.
