i used the LE 2 Pcs Adapter Cable + 2 Pcs 2-Pin 8mm Connector Kit for 3528/2835 Single Color LED Strip Lights, Gapless Strip to Strip, Cables Connect Adapter and LED Strips, Seamlessly Extend LED Strip Lights. This was part of the suggested bundle when purchasing the strip light.

Are the strips covered in like a rubber / plastic?

As I remember, it is covered/sealed in plastic. The description says water-resistance, but I wouldn't suggest you to try that function anyway.

i need 5 sets of these to do our storefront window. are they easily connected?

Yes. Easy to connect. Many sellers have the strip connectors. Make sure you measure your strips and get the correct connectors as the led ribbons come in 8mm and 10mms widths. You would need a fairly high wattage power source to run all 5 at once though and it might be more affordable to run multiple smaller power supplies.
