Perfect for mini tarts, releases easily
I have the Fat Daddio's 9" tart pan, but wanted a smaller size that could be split between just two people or given as a gift. At first I got the 4.5" size which was VERY small and definitely just for an individual serving. So I also grabbed the 6.5" which would be perfect to cut 4 mini slices or to split between 2 people.They work great - as long as you're using a butter-heavy tart dough like a classic pâte sucrée you shouldn't need to grease them, and the tarts pop right out with the removable bottom. You can then use an offset spatula or butter knife to remove the bottom from the tart.

Outright Dangerous with Serious Potential for Injury
I received this pan from Amazon today. I really hate giving this kind of review but this item is a serious safety hazard. The circular bottom edge of the fluted pan (not the removable bottom piece) is RAZOR SHARP! This is not a design flaw. I'm sure it is the result of a manufacturing defect and lack of quality control. The pan is made in China like most everything else these days.Normally I would take a half-round hardened steel file and smooth out the sharp edge. But I don't think most customers would care to do that with a brand new item. And why should anyone need to? Doing so would also create another problem because filing the edge would remove enough of the protective anodized finish to expose the underlying metal to premature deterioration.Minus this defect, the pan is sturdy and well designed for an attractive price. It would otherwise probably rate 4 or 5 stars from me.

Great Tart Pan for the Price, Cleans up in a Snap
I bought this tart pan after reading a recommendation for it online. The recommendation said that the tart pan was a great pan for the price, and functioned just as well as much more expensive pans. After using this pan a couple of times, I couldn't agree more.I've made a couple of recipes in this pan and its 11 inch sibling, including one pecan tart that boiled over the top of the pan, creating a fantastic, burned sugar mess. I was sure that I would never get the pan clean, since burned on sugar is notoriously hard to clean up, but after about 10 minutes of soaking in cool water, the pan came clean easily, and looks brand new. The brushed aluminum on this pan works much better as a non-stick surface than my actual non-stick bakeware, which starts to show age almost immediately. The bottoms of these pans come out easily, making for easy tart prep and presentation.I would recommend this tart pan and the pans in other sizes in this line to anyone looking for a good sturdy tart pan. This pan works great, and you can't beat the price.
