Opened My Eyes to Tasty Vegan Food!
My reasons for eating vegan had less to do with eating good food and more to do with eating in a more sustainable way for the planet. I was pleasantly surprised with the many wonderful recipes in this book. There is such a wide array of options, using a multitude of ingredients and flavors I'm not accustomed to experimenting with. This variation made for a pleasantly satisfying and interesting culinary excursion. Some of the meal prepping does take some time, but you can pick and choose what you want to do rather than go verbatim by the meal plan. I learned a lot about meat and especially dairy substitutes from this book which was pretty cool. Would recommend for anyone ready to make dietary changes to live in a more sustainable way! Happy cooking!

Good Vegan Cookbook For Beginners
The 30-Day Vegan Meal Plan for Beginners is a comprehensive guide to the vegan diet, including the health benefits, what to have in the kitchen, essential ingredients, and meal plans. The recipes are divided into logical sections, which I have listed below with some of the standouts.Breakfast: Tofu Eggs; Blueberry Oatmeal with Walnuts, Banana, and Coconut; Tex-Mex MigasSalad: Tropical Quinoa Salad; Napa Cabbage Salad; Tex-Mex Taco SaladSoups and Stews: Thick and Hearty Minestrone; Tex-Mex Tortilla Soup; Quick Cuban Black Bean SoupBurgers and Sandwiches: Lentil Sloppy Joes; Italian Seitan Sausage Hoagies; Jackfruit Barbecue SandwichesApps, Sides, and Snacks: Cashew Mozzarella and Marinara Dip; Tofu Summer Rolls; Pan-Sauteed Sweet Plantains; Spanish RiceSauces and Dressings: Cashew Caesar Dressing; Peanut Sauce; Mango RelishEntrees: Southwestern Black Bean and Quinoa Bowls; Portobello-Pineapple Poke Bowls; Caribbean Jerk Tempeh BowlsDesserts: Texas-Style Pineapple-Mango Cobbler; Coconut Rice Pudding; Spiced Baked Apples with Walnuts and OatsThere are a wide variety of recipes in The 30-Day Vegan Meal Plan for Beginners, though the flavors are definitely shaded towards tex-mex. I found many solid recipes that are easy to make and showcase the plant based eating lifestyle. I wish that the author had included photographs of finished dishes, as there are few inspiring visuals.Disclaimer: I was given an Advanced Reader's Copy of The 3o-Day Meal Plan for Beginners by the publisher. The choice to review this cookbook was entirely my own.

Easy delicious recipes
I love this cookbook. It’s my new favorite. I don’t use the meal plan but the recipes are easy and delicious for the new vegan/vegetarian. All the recipes are vegan, but I just use regular cheese or mayo when it calls for a vegan version because I’m not dairy or egg free yet. Excellent value.

Surprisingly delicious!
There are some really good recipes here. The “fried” cauliflower is AMAZING and so easy to make. The blueberry oatmeal (every person I have made it for has loved it), the “chocolate” smoothie is my son’s favorite and so healthy.Very much recommend this book. It has new and tasty recipes, different from the typical vegan book.

Used Book for Price of New???
The media could not be loaded. My copy of the Vegan Meal Plan for Beginners appears to have had a notation made and erased. I’ve got to say that this is disappointing…
