Can this be used in hot water e.g. a sous vide setup? About 130-145 degrees F

the suction cup would probably "fail" at higher temps. it would become more pliable and would lose suction. I thought of the same use, then wished it had used weights to hold the food down.

I use food saver bags to freeze my meats will this work?

It should work just fine as long as the food bag fits the claw (or is not too big to fit the claw).

is this dishwasher safe?

Mine has done well in dishwasher top rack.
