The spec said it's 2 x brass stud with nuts, but also said copper studs/nuts-which one is it ?

The nuts and washers are steel and rust quickly.

can i just but the end screw on caps somewhere? i lost the red one to my power inverter and dont want to have to buy a while new set for 1 screwon cap

as long as they are the same size it should work just fine. I used them to make a battery box for my ham radio.

What material is the red and black plastic pieces?

Copper posts with plastic covers worth the money

can the top screw come off, if used with a ring terminal?

Yes, it's 2 sets of nut systems.
