My wife finished this as her first lego set ever last week. how much does she have to take apart to install this? how long does it take?

She'll have to do quite a bit of deconstruction/reconstruction. It will take several hours in my opinion--but I thought it was worth it--it vastly improves the model!

Doesn't the Lego kit come with a light set? Why would I need this light set?

No lights with the original LEGO set, which is very detailed and appealing. These lights are incorporated into the scene--for example, the two above the coffee bar change colors, and there are lights mounted under the awnings outside--plus the two studio lights do not light up with just the LEGO set, but they do when you install these lights. It really adds to the appeal of the set.
