Does this really take 5 months to ship?

I ordered on October 8, 2017 and received a ship notification on November 21, 2017. The previous estimate was December 7, 2017 - March 3, 2018.  I guess I got lucky.

Question 2

What's the real difference between this vs. using your oven's broiler or simply throwing your sous vide steak into a hot cast iron pan for 2 min?

For steaks and chops with two+ flat surfaces, I found that a cast iron pan, preheated, works best (I use 90 seconds per side at ~400F).

For chicken, large roasts, etc., Anything with a more complex shape that prevents good contact with the cast iron, the searzall works best to crisp up the outside without changing the doneness.

Most residential broilers just don't have the heat needed to duplicate the effect - the get there eventually, but they affect the doneness by the time you've got a sear.

Question 3

How much smoke is involved while searing a steak? I usually sear using a cast iron but my apartment hood can't handle the amount of smoking.

For me, changing to avocado oil had a big effect on reducing the smoke, as it has a smoke point of over 550 degrees and I heat my cast iron pan to 450 to 475.

Question 4

I just got mine in and it only has one screen, should it have a screen for the front and back?

Searzalls shipped after March come with one of our new stronger,palladium coated screens. Older Searzall came with two, one of whichwas a replacement screen but there was an error with the packaging sothat the change wasn't reflected on the new packaging. There's still an inner screen and an outerscreen but you shouldn't be able to see both screens when the Searzall isassembled (the inner screen is nestled inside the outer one).
